Gooey Choc Chip Cookies

I am so so excited to finally write this blog post!!! As you will certainly learn by following along our blog I am the baking/cooking addict from the both of us. Seriously now, I just LOVE standing in the kitchen creating new healthy, vegan, gluten-free recipes. –yes, I‘m gluten-free and vegan- How sad would it then be, if I didn‘t share my love for home-made foods with you. ☺
Only a couple of days ago, I made the best –and i really mean THE BEST- choc chip cookies I have ever baked in my life. I was craving for something sweet –and chocolaty- and just punched some ingredients which I had by hand together, neither measuring, nor looking for some recipe inspiration before. So honestly, I didn‘t expect too much, but when I finally took them out of the oven after staring at them for at least 15 min, burned my fingers by the try to take them from the tray after only 2 sec of cooling –why am i always so impatient?- , and broke one into two pieces to test the consistency, I couldn‘t believe my eyes. These randomly made cookies were the gooey- and fluffiness in „person“ –in cookie?-. And the cherry on the cake? They are healthy!!! Even though they taste nasty like pure calorie bombs.
So if you also always crave for something sweet after dinner or lunch –or every other time- but don‘t want to abandon your good intentions –don‘t want to ruin your hard worked on bikini body- this is the perfect recipe for you!

These cookies are:
Gluten free
Lactose free
Vegan
Sugar free
Healthy
100% craving satisfiers
Ingredients:
80g Almond meal
40g Tapioka flour (or any other glutenfree/nonglutenfree flour)
2 tbsp Coconut flour
1/2 package of Baking powder
2 tsp Chia seeds2 tsp Flax seeds
100ml Almond milk (or any other non diary milk)
2 tbsp Coconut oil2 tbsp Gooey paste
Pinch of salt
Vanilla extracta
little bit Cinnamon
Dark chocolate
What to do:
1. Preheat the oven to 180 degrees top and bottom heat and line a baking tray with baking paper.
2. Put the chia and flax seeds into a small bowl and add twice as much water. Set aside.
3. Mix the milk, heated up coconut oil, gooey paste, salt and vanilla extract together in a large bowl. As soon as the chia and flax seeds have soaked up all the water, add them to the wet ingredients.
4. Put all dry ingredients -except the chocolate- into a bowl and give them a gentle stir.
5. Slowly mix the flours into the wet ingredients. The dough should be sticky, if it’s too liquid, add more flour, if its too dry, add more milk.
6. Chop the chocolate into dices and add to the dough.
7. Form round, cookie size looking, dough blobs by using a tablespoon and place them with some distance on to the baking try.
8. Bake them for about 10 - 15 min until golden brown. Tipp: The cookies are best when they are still warm. They should be crispy on the outside and gooey in the inside.
