Gooey Caramel Paste

-it's all about the basics


Every organised healthy kitchen needs those basics you always need to have by hand. In other words: healthy alternatives for all those unhealthy, sugary and fatty ingredients which you can’t just skate round because they are the major ingredients in your recipes. Lucky for you, that I’ve created the best alternatives for all those basics which taste as good as the originals. -even better-


So let me introduce you my first basic recipe: The Caramel Gooey Paste

Sweet, delicious, super naughty. My healthy version of sweetener/sugar. You can’t notice a difference between the taste, no matter if in a cake, pudding or some pancakes.



This caramel paste is:

  • Gluten free

  • Lactose free

  • Vegan

  • Sugar free

  • Healthy

  • Super sweet

  • Super easy and fast to make



Ingredients:

360g medjool dates (about 20), pitted - or as much as you needwater


What to do:

1. Place the dates in a food processor/blender with 1 cup of water and blend until smooth and creamy. (there shouldn’t be any pieces left) If it doesn’t blend properly add a little bit more water. -and yes it takes a while so just be patient-

2. If the paste is creamy and thick enough to held a spoon transfer it to a jar and store it in the fridge for about one month or freeze it.

Tipps:

1. You can add this paste to every recipe instead of sugar or any other sweetener


2. Medjool dates are the best to blend, if you take other dates soak in warm water first

3. If you put the needed amount in the microwave for just a second (after having it in the fridge), it’s easier to blend it into a dough (e.g. if you bake a cake) Bisous,
